Yes, I totally agree. I think beets taste like dirt. But beet chips I like. (I do the lazier version, where I just pour a bunch of olive oil in the pan and then toss is around and roast the heck out of them, without turning. Because...I am lazy.)

Oh, see, I'm the exact opposite. I grew up convinced I hated beets, until a few months ago when I also decided I would at least try everything from my farmshare (I'm not quite there yet, with actually using everything to completion, but I'm trying). I roasted mine, sliced them, sprinkled them with feta and walnuts, and LOVED them. Now I'm excited every week when I see the beets.

I made this last week, and will make it again tonight:
<a href="http://tastykitchen.com/blog/2011/05/beet-risotto-with-goat-cheese/" rel="nofollow">Beet Risotto with Goat Cheese</a>

Maybe it's not delicious if you don't like beets, but I found it completely delicious (even if it looks like something out of a horror movie).

(I don't think I'll use up all my beets with the risotto, so I'll definitely try chipping them. Thanks for the recipe! I hope you continue to share as you experiment.)
